Red Velvet Muffins – Paleo Recipe


6 x large organic eggs

¼ cup / 65ml organic coconut oil, melted

¼ cup / 65ml organic coconut milk

3 tbsp organic honey

Pinch sea salt

4 tbsp raw organic cacao powder, sifted

1 large handful  / 1 large organic beetroot, peeled and grated

½ tsp baking powder

4 tbsp plus 2 tsp organic coconut flour, sifted


NOTE: use the scoop and sweep technique for your flour. Scoop the table spoon into the flour then sweep across the top with the flat side of a knife.


1.     Preheat the oven to 200°C

2.     Line  a muffin tin with 6 muffin cases

3.     Whisk the eggs, oil, milk, honey, sea salt and, cacao powder together in a large bowl

4.     Now stir the beetroot and baking powder in

5.     Next add the coconut flour, 1 tbsp at a time.  Adding the last tsp only if needed.

6.     Pour into the muffin cases and bake for 20-25 minutes or until a skewer comes out clean

7.     Leave to cool on a wire rack
