Carbon Free Cooking is the result of visionary AHMS Managing Director and founder Anchalika Kijkanakorn’s long-standing, unshakable commitment to sustainability. At Aleenta Hua Hin-Pranburi Resort & Spa chefs oversee celebrated gourmet menus featuring the freshest locally sourced ingredients and produce.

 

“This food underpins Aleenta Hua Hin’s The Cellar restaurant,” Ms Kijkanakorn said. “What we do is use solar ovens, smoke houses and honed molecular-cooking methods to prepare sumptuous and pure organic food while making sure our carbon footprint stays a minimum.

 

“As you’ve probably already worked out we don’t take our commitment to the environment lightly. We never have and never win. AHMS The Collection was borne out of a desire to conflate the best in barefoot boutique luxury with the best sustainability practices, which we believe we’ve been able to do.”

 

Almost all the produce used at the resort, which is close to 90% sustainable, is procured from its organic farm. That includes a community garden where locals can take what they like and pay it forward via replanting, an honour system that is a matter of community pride.

 

Chicken, beef, pork, fruit and vegetables are farmed and transferred to Aleenta’s kitchens by bicycle. The menu includes solar-baked lime and honey cake cooked in a wooden box lined with foil, sand-baked clams and steamed seawater seaweed, and clay pots buried in the beach.

 

Located on the serene Pak Nampran Bay, Aleenta Hua Hin features 22 unique residences, most of which have a private pool. All suites offer commanding views of a stunning Gulf of Thailand sunset.

 

The resort is a three-hour drive south of Bangkok.
