For a vegetarian restaurant to wow the French is no mean feat.  In May 2011, the reviewer from Le Figaro was so entranced by the presentation at multi-award winning Brighton restaurant, Terre a Terre, they almost had to remind themselves to eat the “fabulous vegetarian cuisine of this restaurant.”  And ‘cuisine’ is not a word a French food critic uses lightly: beyond ‘good food’ – the standard in even the humblest French restaurant usually ranks with what we in Britain are prepared to pay through the nose for – instead an example of high culinary art.
